HIGH-PROTEIN VEGETARIAN PASTA

This is a very easy nutritional meal that you can make in 10 minutes! It’s high protein, vegetarian and low in fat. We simplified our pasta recipe it, so you can make or meal prep this  quickly and have this for lunch! 

INGREDIENTS (2 PORTIONS)

1 Pack fresh spaghetti (250 grams)

1 pack ‘kruimgehakt’ Vivera

200 grams mushrooms

200 grams courgette

1 onion

1 Glove of garlic (optional)

Fresh basil

200 grams can of chopped tomatoes (see link)

Albert Heijn fresh napolitana sauce or Arrabbiata sauce (similar nutritional values – see link) 
Pepper
Salt

RECIPE (1O MINUTES)

Step 1: Prepation

  1. Cook water
  2. Chop the onion and courgette
  3. Clean the mushrooms and cut them

Step 2: Cook

  1. Cook the pasta in a lot of water for 4-5 minutes
  2. Glaze the onion in the meantime
  3. Add the mushrooms and courgette and stir
  4. Add the ‘kruimgehakt’ and stir

Step 3: Sauce

  1. Add the arrabbiata or napolitana sauce
  2. Add half the can of chopped tomatoes
  3. Optional add water if it’s too thick
  4. Add basil, pepper and salt – let it simmer
  5. Keep an eye and the pasta, it might be ready!

Step 4: Almost done!

  1. Is the pasta ready? Drain it and rinse it shortly with cold water (to prevent stickiness)
  2. Divide everything over two boxes or plates: a nice meal(prep)!
